The stirring action breaks up any clumps and evens out the density of coffee within the puck, resulting in reduced channeling and higher, more even extractions.
The WDT is named for John Weiss, who developed the technique back in 2005 as a way to compensate for grinders, especially smaller home grinders, that produced excessive clumps. What started as coffee forum advice has become the single most recommended intervention in home espresso technique. The evidence is compelling: “The most compelling evidence for the efficacy of WDT is reduction in channeling. Multiple thin needles matter because a single toothpick provides insufficient coverage, multiple thin needles (4-8) are needed for effective clump breakdown. Once you’ve practiced, a well-practiced WDT technique should only add about 30 seconds or less to your shot prep time, and the results in the cup are definitely worth it.
The sequence matters as much as the individual steps. Distribution must come before tamping, clumps locked in by the tamper cause channeling, and no amount of pressure fixes an uneven bed after the fact.

1. Dose accurately. Weigh your grounds to within ±0.1 g of your target dose. 2. WDT, stir from bottom to top. To ensure an even distribution of coffee throughout the basket from the bottom to the top layer, start at the bottom and lift the needles higher as you go. The goal is to break up clumps and homogenize particle density so the entire bed resists water equally.
3. Level the surface. After WDT, the bed will be fluffy but not perfectly flat. WDT breaks up clumps but doesn’t perfectly level the bed, a distribution tool or Stockfleth’s move (finger leveling) after WDT ensures a flat surface before tamping, and both steps together produce more consistent results than either alone.
4. Tamp straight and consistently. The most important part of tamping isn’t how hard you press, it’s making sure the tamper is perfectly level and that you apply the same pressure every single time. A standard target of around 25-30 lbs (roughly 11-14 kg) is widely cited, but levelness is what actually prevents channeling. An angled tamp is the single most common cause of channeling, uneven crema, and shots that run fast on one side.
5. Consider a puck screen (optional). A metal mesh filter on top of the puck is uniform in composition, meaning water will have a tough time finding pockets of inconsistencies to penetrate, it evenly distributes pressurized water coming out of the group head to help reduce channeling and improve even puck saturation.
6. Lock in immediately and pull. Don’t let the portafilter sit, humidity and gravity can shift the puck in the few minutes between tamping and extraction.

Machine pressure. Most commercial machines apply around 9 bars of pressure during extraction, which tends to be the sweet spot. Some home machines, however, push upwards of 14-15 bars, a higher pressure output that tends to exploit inconsistencies in the prepared coffee grounds. A dirty group head.
